The Rhinoceros Beetle can also be found in the Castle during the events of Chapter 8. Once you're in the courtyard it's in the northwest corner when facing the fountain with fish. You'll need to step into the water to grab it.

Tested the beetle against Verdugo, no bonus damage. Took the same amount of ammo between 2 fights with / without the beetle

There is another when you first jump down to fight Krauser at the first stage if your final battle with him...do a 180 when the fight begins and run straight back to wall you jumped down from and it's right there. I'm pretty sure the nettle also Max's out power stats, especially with the knife. I hit Krauser with two rifle headshots and then stabbed him once in the face after eating the beetle and ended that stage if the battle. It may just increase Critical damage, not sure.
