When you are unsatisfied with the Nature of a Pokemon after catching it, there are 3 methods of changing your Pokemon's nature!
Returning from Pokemon Sword and Shield, Mints are a rare item type which can change a Pokemon's nature. Strictly speaking, this is the only way to truly change an existing Pokemon's nature, as the other methods deal with determining the Nature of a Pokemon before it is obtained.
Mints can be purchased for 50 BP, the type of currency available in the Battle Tower. You'll need to win lots of battles to earn Mints for the chance to change your Pokemon's nature, so unless you have a Pokemon which is already 100% ready to go for competitive play except for its Nature, you're better off raising a Pokemon with the right Nature from scratch.
To do this, simply save your game before the encounter. Then, proceed with the battle and catch the Pokemon. Check the Pokemon's nature and if the Nature is not to your liking, simply restart your game to the point before the encounter then battle it again.
When you battle and catch the Pokemon again, it should have a different Nature. Keep on dong this until you get the Nature you are satisfied with!

Ditto | Everstone |
If a Pokemon you've caught is particularly rare/has a low encounter rate in the wild, it'd most likely be faster to breed it with a Ditto to pass on the preferred Nature to its child. Ditto can breed with any Pokemon and any gender, with the exception of Legendaries.
Obtain a Ditto with the Nature you want the offspring to inherit. Make it hold an Everstone then breed it with a Pokemon of the same species you want. When a Pokemon holds an Everstone while breeding, the Pokemon is guaranteed to pass on its Nature to its offspring.
How to Breed and Hatch Strong Pokemon
The Everstone can be obtained via trade for a Haunter with an NPC in the north-west house in Snowpoint City (you need to trade a Medicham for it) , via digging in the Grand Underground, or as a held item on a wild Geodude.
