You can't change your name, gender, and skin color after confirming your name and appearance at the start of the game. Clothing styles can be changed, with accompanying hairstyles, but hair and eye color cannot be changed.

Pokemon BDSP EeveeEevee (Lv. 1) Bebe in Hearthome City, after obtaining National Dex

The above 2 Pokemon can be obtained from the listed trainers in Hearthome City. They are gifts that can only be received once, but they're not one-time available Pokemon, as you can also catch a Happiny and an Eevee in the Trophy Garden.

Master Ball from Cyrus

You obtain a Master Ball after beating Cyrus at Team Galactic HQ. This event only happens once per save file, to ensure each player obtains 1 Master Ball through story progression. You can, however, repeatedly get Master Balls if one of your Pokemon's IDs fully matches the daily lottery numbers in the Jubilife TV station.

After beating Team Galactic for good, you'll be able to catch Azelf and Uxie in the caverns of Lake Valor and Lake Acuity, respectively. You can similarly encounter Mesprit in the cavern of Lake Verity, but it will leave the cave and become a roaming Pokemon that you'll subsequently encounter at another random location in the Sinnoh region.

The following Pokemon are only available via a one-time event in the post-game, after beating the Elite Four, becoming Champion, and obtaining the National Dex.

You choose your starter Pokemon at Lake Verity at the start of the game, when attacked by 2 wild Starly's. You can only obtain 1 of the 3 Starter Pokemon per save file. Obtaining the other 2 starter Pokemon will require trade.

How to Get All Starters

One-Time Trades with NPCs

NPC's Pokemon Pokemon to Trade Location
Pokemon BDSP AbraAbra Pokemon BDSP MachopMachop Woman in 1st floor of apartment building left of Poke Mart, on the northwestern side of Oreburgh City
Pokemon BDSP ChatotChatot Pokemon BDSP BuizelBuizel Boy on 1st floor of Eterna Condiminiums
Pokemon BDSP HaunterHaunter Pokemon BDSP MedichamMedicham Woman in northwestern-most house in Snowpoint City
Pokemon BDSP MagikarpMagikarp Pokemon BDSP FinneonFinneon House in the middle of body of water on Route 226

The above in-game trades with NPCs can only be done once and you can't retrade with them to get the Pokemon you traded back. The Pokemon's level will match the level of the Pokemon you give in the trade. The Pokemon each have a set Nature, Ability, and held item, so rerolling doesn't affect them.

What to do Before One-Time Events

Save to Allow Reroll

Saving before an encounter with a Legendary Pokemon or before choosing your starter will allow you to reroll its Nature and IVs (Individual Values). As the Nature and IVs of Pokemon are reset on each encounter, it's possible to reset repeatedly until you have obtained the Nature and IVs of your choosing.

Although checking IVs wasn't available in the original Diamond and Pearl, it's been possible in other Generation VIII games, so it will likely be added in Brilliant Diamond and Shining Pearl.
