There is no official statement regarding a demo, but it's likely that there won't be a demo, considering the game will be out in one week.
Instead of a demo, Capcom released a character creator tool so players can jump straight to the story upon the release of the full game.
Dragon's Dogma 2 retains most of the systems and mechanics of the first game. It's essentially a revamped game with a new plot, improved visuals, and quality of life additions.
You won't miss out much story-wise if you don't play the first game, but it's recommended if you want to be familiar with the game's systems and mechanics

Capcom just released a 7-minute video that breaks down the plot, world, and lore of Dragon's Dogma. If getting a hint of the story was why you wanted to play the demo, then it's worth checking out the video.
The Dragonsplague is also touted as one of the new features in Dragon's Dogma 2, and it is likely to be one of the major plot points throughout the story that also affects gameplay.
