Unlike other RPG games where an auto-lock feature is present, Dragon's Dogma 2 does not have this mechanic available and players will have no way to specifically lock their sights on a certain enemy.
Despite missing a lock on feature, you can still somewhat choose your targets by directly positioning your camera towards an enemy. Your character will then attack the nearest enemy that your camera is looking at.

Archers and Mages do have some sort of targeting system when in combat.
For Archers, they can press and hold the R1/RB buttons to manually aim their bow at enemies. For Mages, certain spells allow them to choose a target by using the R Stick to switch between enemies.
