The Chocobo mount is unlocked through the side quest The White-Winged Wonder. To trigger The White-Winged Wonder side quest, you first need to progress through the story until the 22nd main quest The Gathering Storm, then complete its subquest Release.

FF16 The White-Winged Wonder Quest Location

You can obtain a Chocobo mount after completing the relatively simple The White-Winged Wonder side quest, where you just need to save a chocobo from some poachers. After completing the quest, Rowan, Traveling Trader will reward you with the mount and the Ambrosia's Tack curiosity.

How to Ride the Chocobo

Press the X Button Near the Chocobo

While in the open field, you can call on your Chocobo by pressing and holding the R3 button. Once a Chocobo is near you, press the X button to mount it.

You Cannot Summon and Ride Chocobos in Towns and Dungeons

Chocobos can only be summoned in the open fields! If you try to enter towns while riding a Chocobo, you will immediately dismount it.

When You Ride Alone Bronze Trophy
FF16 - Silver Trophy Ride Ambrosia for the first time.

After unlocking Ambrosia the chocobo, riding it for the first time will reward you with the When You Ride Alone bronze trophy.
