You'll only be able to unlock this hunt by completing the A Song of Hope main quest.

How to Beat Carrot

Use the Same Strategy as the Battle with Morbol

Carrot is just a more powerful Morbol, which was one of the first bosses you fight in the game. The same strategies you did when fighting Morbol will work for this boss.

Just like Morbol, it will have tentacle attacks that are slow and predictable and will be easy to precision dodge. Remember to avoid stepping on the black goo that it spouts, and attack it from the sides to avoid being hit by its Worse Breath ability.

Description
If you should come across a red carrot protruding from the marshes of Three Reeds, do not attempt to pull it from the swampy soil. It is, in truth, another root vegetable entirely—an exotic species of morbol that uses a modified, carrot-like vine as a lure to draw its prey close, before emerging from the earth and swallowing them whole. A cruel way for Nature to turn these times of privation to her advantage.
