Equip Two Weapons At the Same Time

Sword and Axe Dual Wield
To Dual-Wield weapons, all you have to do is to equip two weapons in both hands. This will allow you to use both weapons at the same time.

Different Weapon Types Won't Allow Dual Attacks

While you technically can Dual-Wield two different weapons, you won't be able to use both of them in an attack at the same time if they are different weapon types.

Unique Movesets

Dual-Wielding will allow you to use movesets that are exclusive to Dual-Wielding. You may be able to use strong moves that can only be accessed by Dual-Wielding so do consider a second weapon during some of your runs.

Easily Proc Status Effects

If you're wielding weapons that can inflict status ailments, you'll be able to rapidly apply the said status effect on enemies quickly. This is especially true if your weapons can inflict the same status ailments. The Dual-Wielding nature and moveset where a single move will count as multiple hits makes this feat an easy task.

Access Both Sorceries and Incantations

If you're playing a spell-caster class like the Recluse, Dual-Wielding two staves, two seals, or a staff and a seal on one hand each will give you access to 4 spells at an immediate given time. This gives you a lot of flexibility with the spells you can cast in a fight.

Higher Stamina Consumption

Wielding two weapons, while not consuming the same stamina as swinging each weapon once, will still cost considerably more stamina than a single weapon. Nightfarers with poor stamina scaling won't be the best dual-wielders due to their limited amount of actions.

Recommended Weapons to Dual-Wield

Curved Swords

Curved Swords are great options as their movesets are one of the best when it comes to Dual-Wielding. They have swift attacks and low stamina cost which makes them effective DPS wise.

Twinblades

Twinblades are great weapons to dual-wield due to their fast nature. Dual attacks swing fast while they have decent range as well. You can also apply their status ailments to enemies quickly if they have one.

Colossal Weapons

Having two Colossal Weapons won't really allow you to apply status ailments rapidly but you won't have to. Hitting enemies with two gigantic weapons at the same time is sure to deal a significant amount of damage and stagger that they won't be able to take easily.

These are also perfect for jump attacks as you can quickly use both weapons during your jump attacks to deal big damage.
