Erdtree Avatar's high damage means any tanky Ash Spirit can be easily dealt with. Instead, summon Ash Spirits that create multiple allies such as Lone Wolf Ashes. They should be able to distract him enough for you to get a couple hits in. Once they die, though, make sure you get on Torrent and create some distance.

While the Caelid variant of Erdtree Avatar sports some different attacks, the same basic strategy applies.
