Use Light Skills Poison Him Buffs and Debuffs are Encouraged Guard or Use an Ice Dampener After Loki Gathers Magatsuhi Healing Always at the Ready

Hama, or better yet, Hamaon skills are necessary to get up to 8 moves per turn. Cast Light skills to extend your turns, and then beat into Loki with Physical attacks.
Loki is Weak to Poison so use Poisma, which you can learn from Slime and Aquans Essences. If you rain down on him with Light, Physical, and Poison, this should be a quicker boss fight than most.
Using Tarunda to bring his damage down and Marakunda to increase your defense will increase your survivability by a huge margin.
Loki is bound to use Mabufula the turn after he Gathers Magatsuhi. To prepare for this, let your party members Guard to reduce damage or use an Ice Dampener to block it completely.
Loki hits hard with this powerful Magic stat, so stay ready with your Dia spells. Bring MP restorative items to keep your MP up.

Loki has low Vitality, so take advantage of this by hitting hard, physically. Zouchouten has powerful Physical skills like Fatal Sword, which can crit, and Charge, which increases your damage.
Setanta is also good, as he can also do Fatal Sword and Acrobat Kick which lands crits, and can also learn Fang Breaker, which lowers the enemy's Attack.
Parvati and Thoth can cast Light magic, so they are good demons to have in your party.
The Essences of Slime and Aquans have Poisma skills, so you can equip your party members with these Essences to give them access to Poison-inflicting skills.
Loki uses every basic element (Fire, Ice, Electric, and Force) so it would be extremely difficult to make a party that's totally Resistant to his skills. There are a few good choices, though:
Forneus and King Frost absorb Ice, which makes them fantastic to have. Baphomet is an alternative choice, since it is a powerful demon that is not weak to any of those four elements. Thoth is also another good choice, since it is not weak to the four elements, and also blocks Fire.
Parvati can serve as a good healer, as she can heal the party with Media. Hariti has good singel-target healing skills with Diarama. They will be very important to recouping health lost to Loki's powerful Magic attacks.
