At the Jeweler, you can easily browse through your Gems and socketed items through the Manage menu. The Manage menu also allows you to replace and socket Gems into your gear free of charge.
However, note that once any Gem has been socketed, they cannot be sold on the Market any more.
In the Jeweler's Manage menu, you can also choose to Upgrade your Gems and Legendary Gems.
Upgrading regular Gems simply costs other Gems of the same kind. However, more copies of the same type of Gem will be needed as they rank up.
Upgrading Legendary Gems requires multiple copies of other Legendary Gems. The number of Legendary Gems required to upgrade will also increase as they rank up.
In the Jeweler's Craft menu, you can choose to craft different kinds of Legendary Gems. Each Legendary Gem requires different types of Runes in order to craft them.
Runes can be obtained from completing Elder Rifts or by purchasing and trading them at the Fading Embers Trader.

In Diablo Immortal, Jewelers are who you will visit to manage, socket, and upgrade the Gems you collect and purchase as you play through the game.
Jewelers are also the people to go to for crafting Legendary Gems, which are used to provide your character with unique effects and significantly boost your Combat Rating.
Seril the Apprentice Jeweler can be found in Westmarch, but you can also find Jewelers throughout the world in Diablo Immortal.
They are marked on your World Map with a Diamond icon that you can easily select and Navigate towards.
