Chocobo Stops are fast travel points allowing you to immediately teleport from one location to another far location.
They are also rest stops, allowing you to recover HP and MP by spending a cushion.

After repairing Chcobo Stops, you will be rewarded with a Golden Plume. This is a type of currency used to purchase upgrades for your Chocobo from merchants at Chocobo Ranches.
When you are close to a Chocobo Stop, you will encounter a Chocobo who will make a noise and suddenly sprint. Follow it and it will lead you to a nearby Chocobo Stop.

I think it might be 8 stops per region. I found 2 in Grasslands that are not on the guide
