You can also steal vials of Celeris from Levrikons, which sell for up to 500 Gil per piece. To do this, simply equip the Steal materia to any of your active characters and use its command once ready.
Levrikons can be found as early as Chapter 2, around the marshes of the Grassland Area region. Additionally, starting from this chapter, you can purchase the Steal materia from Vending Machines for 500 Gil.

Another way to earn more Gil is by completing Expedition Intels, which can reward you with a variety of crafting materials, including rare ones such as rubies and emeralds. These materials can sell for at least 100 Gil per piece, depending on which rare ores you receive from these Lifesprings. If you're not planning to use them for transmutation, consider selling them instead to get more Gil.
You can unlock Expedition Intels as early as Chapter 2, after scanning your first tower in the Chocobo Ranch.

If you need more Gil, completing Odd Jobs that appear along the way is a great way to get it. This is a great way of gathering more Gil to buy more equipment and items while taking on the main story.

The Gil Up Materia can increase the amount of Gil you receive in battle by 100%. Make sure to equip this materia every time you engage in combat to get more Gil afterward.

The amount of Gil obtained through battle will not change regardless of the Difficulty setting. Playing this game on Easy Mode will allow you to defeat enemies way quicker and farm Gil more easily.
To change the difficulty settings, simply head to the System menu, then choose Gameplay. You'll find the Difficulty Settings at the very top of the list, where you can switch to Easy if you're playing on other modes.
Which Difficulty Setting to Choose?

You can farm Gil simply by defeating enemies you find along the way. While fighting monsters may not give you a lot of Gil, it's nice to earn slowly as you progress through the game.

If you have Items or Equipment that have been left unused for a very long time, you may want to sell them for extra Gil. You will eventually collect more powerful items along the way, so don't be afraid to sell stuff.

Hey editor, explain something to me. If the amount of Gil earned if the same throughout the difficulty as you say then why did you neglect to mention that the amount gained is doubled when playing on Hard mode?
