The Mountain Chocobo is a special kind of Chocobo that can only be found in Junon region in Final Fantasy 7 Rebirth (FF7 Rebirth). See how to get the Black Chocobo, how to catch Belle, and how to use the Mountain Chocobo.

To be able to catch a Mountain Chocobo, players must first teach Chapter 4 of the Main Story, where the Junon Region will be unlocked.
Chapter 4: Dawn of a New Era Walkthrough
Once Junon becomes available, head to Gabe's Ranch and take on the side quest titled "Stuck in a Rut," where Cloud and the team help him fix his chocobo cart with dried driftwood.
Stuck in a Rut Side Quest Guide
Once the side quest begins, head west from Gabe's Ranch to an abandoned farm overlooking the sea on a cliff. On the map, it is marked as Chocobo Intel.
Once arriving at the marked location, upon finding the Mountain Chocobo a stealth mini-game begins. Cloud will lose the mini-game if a Chocobo spots him, so use switches in various locations to move obstacles and keep Cloud hidden from their sight.
Once the player is close enough to Belle, get behind the Mountain Chocobo and press △ as soon as it is prompted. Once captured, Cloud and the team can summon the new mount anywhere at any time in Junon; this will make exploration of the Junon Region much easier.
Once the stealth mini-game begins, activate the switch right in front. A small train will start moving slowly; use it to your advantage to stay hidden from the Chocobos.
Activate the second switch once you make it there, then proceed to pick up a few stones while on the way. The stones are very crucial for the next few steps.
When the small train reaches this side, throw a stone at the second switch to activate it again. The obstacle will move again, allowing the player to stay hidden behind the small train.
Upon arriving at the next small train, throw a stone at the switch at the back. The obstacle will start moving to the right, so stay close to it to avoid being spotted by the Chocobos.
The route of the small train should lead straight to Belle. Slowly approach the Mountain Chocobo, and when the Triangle (△) button prompt appears, press it as soon as possible to capture it!
The Mountain Chocobo is unique in that it can climb up or down the steepest slopes with ease. Notably, the slope has to have a Mountain Chocobo Mural imprinted onto it faintly. Players have to keep a sharp eye on these slopes that have the faint shape of a running Chocobo to be able to climb up the top of cliffs.
