The Sinkhole Stroll can be unlocked in the Emerald Stair region by talking to Old Felipe in Felipe's Depression.

While exploring the Emerald Stair region, you may stumble upon Felipe's Depression, and this side quest will immediately start. You'll hear Old Felipe calling for help from within a large sinkhole.
Head down the sinkhole and defeat the enemies along your way to save Old Felipe at the bottom. Speak to him to hear the reason why he was stuck in the sinkhole.
Old Felipe mentioned that he is researching wildlife and needs to find his notes around the area. Help him locate the research notes by heading to the room above, and defeat all the enemies before investigating inside the room for loot and the quest item.
You'll find Old Felipe's Research by the staircase. Head up using the stairs and keep exploring the upper level until you find the huge door that leads outside.
During this side quest, you can also obtain the Sun and Moon shield by burning the spider web next to the quest item by the staircase to get the Rusty Key. There is a small door upstairs that requires a key to unlock to get this shield inside the locked room.
After getting the research notes, head back to Old Felipe downstairs. Give him the Old Felipe's Research and he will reveal his research on squirrel essence.
Once you complete The Sinkhole Stroll, Old Felipe will reward you for bringing the research notes to him with the 550 gold, which will be added to the Inventory.
You can also obtain the Sun and Moon shield as an optional reward while exploring Felipe's Depression during The Sinkhole Stroll side quest. It can be acquired when you get the Rusty Key to open the small door around the quest area.
