After completing the game, the amount of AP you gain will also increase, tripling in value for every battle cleared. With the increased AP yield, you can level up all your equipped materia faster, making it easier to clear difficult side quests and enter Hard Mode with powerful materia in your arsenal.
The AP Up Materia can help you double your AP gain for any linked materia after every battle. You can obtain this materia as early as the start of Chapter 3, right after Barret and Red XIII separate from the group at the Old Republic Tunnel. Once acquired, equip it by linking it next to the materia you want to receive double AP for.
To efficiently use the AP Up Materia, make sure to equip it next to the materia you want to gain double AP for. Otherwise, if placed in a single slot, it will not activate its effect.

You can also equip the Chocobo Armband to triple AP gain for equipped materia. This is the only way to triple the AP values earned from battles before reaching the endgame. The armor can be obtained as a reward from the Esoteric Secrets side quest, available upon starting Chapter 11 in Nibel.

For even more AP gained, be sure to equip the Chocobo Armband with the AP Up Materia. Their effects will stack, but will only affect the materia linked to the AP Up Materia.

You can also complete Chadley's Combat Simulator challenges to earn more AP. Since these challenges come in sets or higher difficulty levels, a higher amount of AP as a reward is guaranteed. For instance, the Grasslands Region Intel: Level 1 can reward you with 28 AP per session, or 56 if you have the AP Up Materia equipped.
However, keep in mind that the AP gain will only apply to the three party members you selected. Those in the backline will not receive AP from these challenges. That said, this method is recommended primarily for leveling up specific sets of materia only.
Combat Challenges can also be rechallenged even if you have already completed them. You won't receive the initial rewards, but you can still earn the same amount of AP with each repeat, doubled if you have the AP Up materia equipped.
Completing Fiend Sighting Intel can also help you earn more AP compared to regular enemies. Similar to the combat simulator, you can repeat these encounters for continuous farming. You can also target Fiend Sightings with multiple enemies to ensure multiple sources of AP.

You can further maximize AP gain by equipping materia to your reserved party members. Even when they're not in your active party, they will still accumulate AP and level up their equipped materia as you progress.
However, as mentioned above, if you're planning to farm AP from the Combat Simulator, keep in mind that party backline will not recieve AP from those challenges. Make sure to cycle your characters if you want their materia to gain AP as well.
Try not to skip any enemies you come across when exploring. While these monsters may not provide higher AP rewards, the AP they generate can still offer significant value by the end of the day. This method is recommended for those who want to slow down their gameplay to explore more.
One recommended area for farming AP is the Mithril Mine. With its straightforward map layout, you can encounter enemies by simply advancing forward. After that, you can simply repeat from the start to respawn the same enemies and gain more AP.
If you see enemies grouped together, don't hesitate to battle them as well, especially if you're farming for AP. While all of these enemies will only reward you with at least 1 AP each, collectively that's 4-5 or more, and it can even double further with the AP Up materia.
