The pity system refers to the gacha mechanic, wherein reaching a certain number of pulls guarantees you either the rate-up or a random character or weapon from the pool.
Arknights: Endfield gacha has two different mechanics for its Pity System, split between the Character Banners (Headhunting) and the Weapon Banners (Arsenal Issue).

In the Chartered Headhunting, the pity for getting the featured rate-up for the 6-star character is 120 pulls. This guarantee gets removed once you get the rate-up 6-star character for this banner and cannot be carried over. If you're looking to increase your character's potential, you will need to do 240 pulls to get the character's token.
The soft pity for the Chartered headhunting starts at the 65th pull, where any subsequent pulls will increase the rate of getting a 6-star character by 5.0000%. Once you reach the 80th pull, you are guaranteed a random 6-star character from its pool of characters.

Note that for the Chartered headhunting, featured rate-up characters from previous banners can still appear as an off-rate character with the same rates as the standard characters in the pool.
However, they will only last in the pool for the current and next Headhunting banners before disappearing.

Basic Headhunting is the permanent standard banner for Arknights: Endfield, where, upon reaching the 300th pull, you will be able to select one of the Standard characters featured in its banner. Note that this is only available once.
Similar to the Chartered Headhunting, soft pity will start at the 65th pull, where its rate increases, and reaching the 80th pull will guarantee you one of the random 6-star characters in its pool.

Above are all the standard 6-Star characters that can be obtained on Basic Headhunting, as well as the Chartered Headhunting and the New Horizon Headhunting.

For New Horizons Headhunting, you only need to reach a total of 40 pulls to randomly get one of the standard characters featured in its banner.
Afterwards, you'll be given a New Horizons Weapon Supply, where you can get the weapon of the character you've received in the banner.

For the Arsenal Issue (Weapon Banner), its pity system is separate from how the character banners work. Not only does it require a different set of currencies, but it also only allows players to pull 10x.
Each issue attempt is equal to 10 pulls, and you will need a total of 8 attempts or 80 pulls to guarantee the Rate-UP 6-star weapon. If you didn't get any 6-Star weapon for 3 consecutive issues, then a random 6-Star weapon from the pull will be guaranteed on your 4th issue.
Arsenal Exchange Weapon Banner Guide

It's not recommended to build pity in Arknights: Endfield. It's highly advisable that you just aim to reach 120 Guarantee for the character you want and 80 Pulls for the weapon you want. Neither carries over to the next banner, so make sure to plan and save up accordingly to reach their guaranteed pity!
While 80-pull pity for the characters does carry over to other banners of the same type, it does not let you guarantee the rate-up character for that banner. It only guarantees that you can get a 6-Star character once you reach 80 pulls.
If no operators are obtained by the time you reach the 65th pull, any subsequent pulls you do after that will increase the chance of getting a 6-Star Operator by 5.0000%. Once you reach the 79th pull, you will have a 75.8% chance of getting a 6-star operator before the guaranteed 50/50.
