You'll receive the recipe to craft the Sunwing Override at the Fabrication Terminal for free, and don't have to spend any resources to unlock it.

Go to the Peak of the Mountain to Override a Sunwing

After you've crafted the Override, follow the objective marker approach a Sunwing at the peak of the mountain from behind. They won't see you if you crouch and sneak up from behind, so this shouldn't pose a big problem.

You'll override one as part of the Quest, so there's no way to miss obtaining the Flying Mount.

Use to Find Collectibles

Many of the rare items in the game, such as Greenshine Slabs, are found in hard-to-reach places like the cliffs of mountains. You're better off waiting until after you get the Sunwing to try to get each of the game's collectibles, as they will be much easier to gather when you can simply fly between the locations of each.
