The first step to unlocking Castellan Athon for recruitment is to liberate Battlehorn Castle. Help the castle soldiers defeat the marauders attacking near the entrance of the castle to unlock Battlehorn Castle as a player home.

However, unlike the Battlehorn Man-At-Arms that are available as followers as soon as you liberate the castle, Castellan Athon will only appear in its halls after you purchase the Battlehorn Barracks upgrade.
To buy the upgrade, head to the Merchants Inn found at the Imperial City Market District and look for Nilphas Omellian (Dark Elf). Choose to Barter with him in order to find and purchase the Battlehorn Barracks upgrade. The price of this upgrade will vary depending on your Mercantile skill level.

Once you've purchased the Barracks upgrade for Battlehorn Castle, fast travel back and explore the Battlehorn Castle Great Hall to find and recruit Castellan Athon. Speak to him and choose Follow me to recruit him as a follower.
If you can't find in the Great Hall, try waiting until night time. His bed will be in the same room as the 4 Battlehorn Man-At-Arms. During the day, you can also sometimes find him in the East Hall of the castle.

If Castellan Athon dies in combat, the only way to respawn a Castellan would be to return to Nilphas Omellian and purchase the Battlehorn Captain upgrade for the castle. However, the new Castellan will be a generic Battlehorn Castellan NPC rather than Castellan Athon.

Castellan Athon is part of the group of NPCs that become your followers once you unlock and gain ownership of Battlehorn Castle. Unlike key NPCs, Castellan Athon is not flagged as essential. This means that he dies instead of getting downed when his HP drops to 0.
While roaming the halls of Battlehorn Castle, Castellan Athon will wear regular clothes. However, when made to follow the player, he will change into a set of Steel Armor similar to the Battlehorn Man-At-Arms (sans helmet).
