They are resistant to illness, although they are vulnerable to fire, frost, and shock.
Dark Elf

Bretons have high Intelligence, Willpower, and Magicka Bonus attributes, and excel at certain skills such as Conjuration, Mysticism, and Restoration. These make them suit the role of defensive spellcasters.
They also specialize in summoning and healing magix.
Argonian

Thornmarsh Argonians are a different story, as they have a high Intelligence attribute that makes them ideal as spellcasters.
They are also immune to poison, and can breathe underwater and pick locks.

Khajiits boast a high Agility attribute, and specialize in certain skills such as Hand-to-Hand and Acrobatics that give them suitability to take on thief roles.
They can also see in the dark, which further reinforces the thief class for this race.

Races Provide Notable Bonuses to Attributes and Skills
When choosing your Race, you will notice that some of your attributes and skills are notably higher than the rest.
Each race offers high bonuses to some attributes and skills, so make sure to consider these when choosing your race at the start of the game.
Each Race Has Unique Powers and Abilities
Additionally, each race has their own unique powers and abilities that either buff a particular stat or raise the potency of their attacks in battle.
Some examples that can be cited are Redguards' Adrenaline Rush or Orc's Berserk, both of which are active abilities that raises their combat utility.
It is recommended that you prioritize choosing your race based on the unique powers and abilities it has in the game. While attribute and skill bonuses are helpful, you will eventually reach a level where unique abilities are more benefiical.
