Since the Monk class favors Agility and Willpower, and Stealth is its specialization, Acrobatics, Hand-to-Hand, Sneak, and Alteration are the skills that makes the most sense to prioritize.

Acrobatics and Hand-to-Hand improves the monk's fighting ability. Acrobatics makes the monk more nimble, giving it the ability to dodge attacks and consume less fatigue while jumping. Hand-to-Hand enhances the monk's attacks by increasing its damage and adding effects.

Sneak makes it easier for the monk to sneak up on enemies and deal more damage when attacking from stealth.

Alteration allows the monk to cast all alteration spells, especially ones that provides armor and resistance bonuses.

Using fists or unarmed combat is more in line with the monk archetype. Since the monk will have a lower damage compared to other builds due to being unarmed, it will rely mostly on rapid attacks to overwhelm and defeat enemies.
