The main skills you want to focus on are Blade, Marksman, and Light Armor since these will always be used in combat. As for Block, this skill is negligible since you'll generally be aiming for stealth kills, and it's better to utilize your speed to dodge instead of block.
As for the utility skills, it's recommended to further improve on the Acrobat's Security, Sneak, and Speechcraft since these are all useful skills that benefit a stealthy playstyle.

While Acrobats gain a bonus for both these weapon types. It's better to focus on Bows first since the class gives a bonus to Agility. This means that bladed weapons should be used as a backup for melee fights since you'll mostly be ignoring Strength during early levels in favour of the other stealth-based attributes.

Wood Elf is by far the best choice for this class since it further improves on skills that the Acrobat already has bonuses for. Alternatively, you can pick Khajiit to increase Blade over Marksman, or Dark Elf to increase both, at the cost of increased magic skills instead of stealth.
For the Origin, either choice is good since they both have their own benefits. Generally speaking, Grahtwood is preferred to increase your survivability in combat scenarios, but Reaper's March is also useful if you want to increase your aptitude in social situations.

The best birthsign for an Acrobat is the Thief since it gives a bonus to the attributes you'd want for stealth-based gameplay. However, the Shadow is also another good option since you can use the free daily Invisibility spell that you get to sneak up to targets and eliminate them.
