The Warrior is a pretty straightforward class to build. Your primary damage skill will be the Blade skill since most of the best weapons in Oblivion are Blades. However, if you want to pivot to non-Bladed weapons, you can prioritize leveling Blunt or Hand-to-Hand, instead.
Next on your grocery list of skill priorities is the Armorer skill. As you play and get enchanted gear, you'll start feeling the strain of having to keep up with repairs. A higher level of Armorer should help with your troubles.
Aside from those two, you can focus on leveling up Athletics, Block, and Heavy Armor (in no particular order) so that you can sprint more often, reduce wear and tear when blocking, and improve damage negation, respectively.

Each level up in Oblivion will grant you 12 Virtues to distribute between 3 chosen Attributes. As a Warrior, focus on going +5 Endurance and +5 Strength during each level up in the early game.
For Warriors, you'll want to focus on increasing Strength for more damage, then alternate between Endurance (for more HP), Willpower (for more Fatigue / Stamina), and Agility (for better Fatigue regen).

The best weapon type for the Warrior will be Blades (Longswords or Claymores) since majority of the best weapons in Oblivion are one-handed blades (Goldbrand, the Ebony Blade, and Umbra). While you can definitely lean into Blunt weapons, there won't be as many endgame options compared to Blades.
Note: Make sure you identify if your one-handed blade is a Short or Longsword. Shortsword damage scales with Agility, while Longsword damage scales with Strength.

If you're looking to min-max your Warrior build, then the Stronghold Orc is the best identity to choose because of its high starting Strength, Endurance, and Willpower.
On top of that, you get a cool +25% Magic Resistance as well as a starting 15 Armorer Skill that allows you to blow past the Level 25 skill milestone once you choose the Warrior class in character creation.
However, players who want to play more as a human can choose to settle for a Nord (gets good STR and END) or a Breton (for its absurdly high 50% Magic Resistance).

Funnily enough, the best Birthsign for Warrior isn't the Warrior but The Lord since you get more mileage out of the bonus armor rating and magic resistance as you progress through the game.
However, for those wanting an easier early game, you're better off getting the Warrior for its +10 Endurance and +10 Strength; an equivalent of 2 level ups as soon as you start the game.
