During the Fell Xenologue storyline, classes of characters like Gregory are fixed and cannot be changed, which will keep Gregory as a Sage with proficiencies in Tomes and Staves.

Byleth can further improve Gregory's supportive capabilities with Instruct and Goddess Dance.
With Micaiah, Gregory can keep himself and the rest of the party healthier with Healing Light. It also grants him access to Great Sacrifice for when the team is in a pinch.
If you want Gregory to be in the offense instead of being a healer, you can pair him with Emblem Soren. Doing so will boost his magical prowess, while also keeping himself healthy with Flare.
