Scorch Gorge is a new stage in Splatoon 3 which seems to be situated in a desert in Splatlands. There isn't a gimmick to this stage and the areas that need to be inked are pretty straightforward.
The central part of the stage is a large area with an elevated platform in the middle. This platform can be crossed to reach the enemy's base or used to ink turf and splat enemies from a higher ground.

The elevated platform at the center of the stage connect your base to the enemy's. You can cross it to get to their base and splat them from a good vantage point.
As seen in the video above, there is a small area in the stage where enemies won't be able to see you right away. Use this to your advantage and swim up the wall before an enemy spots you then splat them by surprise.
Try to get to higher ground as much as possible if you're using a long-ranged weapon. This gives you a good vantage point, allowing you to splat enemies and ink turf with your team's color easily.
Enemies won't be able to reach you easily when you're on higher ground either because you can splat them before they even get to you.
Long-ranged weapons and rollers are great for Scorch Gorge.
Because the stage is wide, you can rely on rollers to cover ground easily. They have limited range but you can still splat enemies by doing a charged jump on them.
Long-ranged weapons are also great for Scorch Gorge because the stage offers plenty of high ground. Get on the elevated platform in the middle of the stage and start inking turf and splatting enemies below.
A great strategy is to have the rollers ink turf on the ground while those with ranged weapons cover them from above.
