Skullcap mostly uses normal attacks or Spirit Leech. Have your Vanguard repeatedly draw the Skullcap's attention to give your party members free actions to take.
Skullcap summoning extra allies.
Even if Skullcap summons other Fungoos to battle, don't let that stop you. Keep on blasting him with Fire spells and have your Berserker help out with clearing the extra Fungoos.
Not only does this strategy defeat the Skullcap quickly, it also gives some nice EXP due to killing the extra units.
