Catoblepas will often use Default then counter your attacks of his own regardless of damage type. While this can be negated by the Counter-Savvy support ability, learning a single ability for four people may be too much.
Instead, use the Phantom's level 12 speciality then use the Ranger's Shadowbind to get a 100% chance to paralyze Catoblepas. This will prevent it from defaulting and countering your attacks.
The Vanguard's axe and Neo Cross Slash and an Oracle or Black Mage's thunder spells should be enough to bring down the big cow.
Make sure to only attack when it's paralyzed or you might suffer an accidental death via its counter attacks.
If your Spiritmaster's Job is maxed out already, the only thing they need to do is Default and use Devotion on party members with low MP.
Just keep on Paralyzing the Catoblepas and restoring your Phantom's MP with Devotion and this battle shouldn't prove difficult.
