The light pink wool on Shiny Mareep is easily distinguishable from regular Mareep's off-white to light yellow-colored wool.
This Shiny Mareep image was found by Dr. Matatabi, a Pokemon GO Battle expert and Pokemon Sleep enthusiast!
Both Shiny and regular Mareep are easy to spot as they graze on the grass, though the Shiny version does stick out a bit more.

Sleep Style Dex: List of All Pokemon Sleep Styles
To encounter Mareep after your sleep session, you need to have some movement during your sleep session to get the Snoozing Sleep Type.
It may be best to try to sleep normally to get this Sleep Type. However, if you are a naturally deep sleeper, you may want to move around a bit more before and after falling asleep.
Take note that getting this Sleep Type will only increase your chances of Mareep appearing. You will still have to rely on luck to find a Shiny Mareep.
All Snoozing Type Pokemon
It's ideal to aim for the specific Sleep Type of the Pokemon you're Shiny hunting to limit the Pokemon species that will appear after a sleep session. However, if getting a specific Sleep Type is difficult for you, you can opt to aim for the Balanced Sleep Type.
This is a mix of all three Sleep Types and is easy to get by sleeping normally. You are also more likely to get this Sleep Type by sleeping consistently as Sleep Types are determined by your past sleep data.

When doing your Weekly Missions, you may ocassionally be rewarded with a Pokemon Incense for particular Pokemon.
If you use a Mareep Incense during your sleep session, it will attract Mareep. You can then expect to find mainly Mareep to surround Snorlax during your sleep research. This can help increase your odds of finding a Shiny Mareep.
List of All Incense and How to Get Them
The Good Camp Set, obtained by using a Good Camp Ticket, provides a lot of good benefits for the week.
One benefit you get is to have an extra Pokemon appear after every sleep session. This additional Pokemon can help a lot with your Shiny hunting, since you are guaranteed to have at least four Pokemon appear even if your Sleep Score is low.
Good Camping Set Benefits: Is the Good Camp Ticket Worth It?
You are allowed to have a maximum of two sleep sessions every day. Using both of your sessions daily is an optimal way to Shiny hunt, especially when your Snorlax Strength is still low.
Shiny Pokemon are always hungry, and feeding them any type of Biscuit always results in a mega hit. This means that you only need a single Biscuit to max out a Shiny Pokemon's Friendship, regardless of how many Friendship Points it would normally take.
Save your rare Biscuits, and use the easy-to-come-by Poke Biscuit or daily free Bonus Biscuit to befriend your Shiny Mareep.
Biscuit Guide: Befriend Pokemon Without Making Them Full
Since Mareep is one of the first Pokemon available with a Basic Rating, it may be more beneficial to have a low Snorlax Rating when Shiny hunting Mareep.
The higher your Snorlax Rating, the more Pokemon species and Sleep Styles are made available. If you have a higher Rating, the common early-game Pokemon like Mareep may be harder to encounter.
Of course, you can't force your Snorlax Rating to stay the same. A low Snorlax rating will also hinder you from encountering more than three Pokemon at a time.
But since your Snorlax Rating resets every Monday, it may be ideal to Shiny hunt Mareep during the earlier days of the week.
Snorlax Strength and Ratings Guide
The odds for Shiny Pokemon in Pokemon Sleep are currently unknown, but it could well be similar to Pokemon GO's 1 in 450 odds.
