One thing you can do in the postgame is befriend pokemon you have yet to discover. There are over 300 pokemon in the game and more will be added in future events. So make sure to complete your Pokedex as if you're playing a mainline game since you also get rewards from milestones for registering pokemon!

Along with unlocking new pokemon, you also need to build new habitats. This is the only way to spawn them other than the ones tied with the story. If you're missing some habitats, you can get clues from the PC as well.
Habitat Dex: How to Build Every Type of Habitat

Since the game heavily relies on building and decoration, unlocking more recipes and items in the postgame should be one of your priorities. This gives you more things to place on your island for better aesthetics and even in your house to make it feel more like home.

Another special item you can display is Ancient Artifacts, which you can only get from digging around. This is a good way to spend time in the postgame, completing all the artifacts you can find for extra decorations.

If you're into lore and stuff, you can also continue exploring in the postgame to gather more human records. This gives you an idea of what happened in the game and even shows small previews of familiar people from past pokemon games.

Continue decorating your island to your liking with everything you've unlocked so far, along with new items you can still unlock. You have plenty of places to convert into a bustling town with your new pokemon buddies as residents!

After completing the Do the… Team Initiation Challenge, the once-strange building will leave a hole that you can drop down into. A lone Magnemite will be there. Simply talk to them to befriend them!

Make sure to also prepare a home for them afterward. They require a Factory Storage habitat, which needs a streetlight, a metal drum, a jumbled cord, and a control unit.
Crafting Guide: How to Craft Items

Exploring the hole further reveals that it was indeed once a Team Rocket hideout. In one of the storage areas, you can find the Rocket Hideout CD. Pick it up so you can play it in your CD player afterward.

To reach the postgame, you need to complete the Do the… Team Initiation Challenge important request. Although you unlock this early, you need a lot of progress since the steps within the request span across all the areas required to complete it.
