Lumber can be obtained by giving small logs to a Pokemon with the Chop specialty. One of the first Pokemon you can befriend with this specialty is Scyther.

You can get small logs by using Cut on trees and other wooden objects.

Plant Seeds for More Trees

Pokopia - Use Cut
Aside from logs, trees can also drop seeds when you cut them down. Be sure to plant these seeds and tend to them so that you have a steady supply of logs and lumber.

Some Pokemon can also give you seeds as a gift after befriending them.

Withered Wasteland Pokemon Center
Lumber is needed to rebuild some Pokemon Centers. The center in Withered Wasteland requires 20 lumber to be restored.
