How Many Planets?
6 Planets in Jedi Survivor
There are a total 6 planets you can visit in Jedi Survivor. Although this is less than the previous Jedi Fallen Order's 8 planets, you do end up having to go back to planets several times in Jedi Survivor. Koboh has 5 separate story parts, while Jedha and Shattered Moon both have 2 separate story parts.

Planet Progression Order
Planet Custom Sequence is Available
Similar to the first installment, Star Wars Jedi Survivor will allow players to choose the order of planets they want to explore. For example, after completing Jedha, players are given the option to either first proceed to Shattered Moon or to return to Koboh.
The choice doesn't affect the story, but it affects your gameplay experience of both planets due to the change in sequencing.
