Cal Kestis was the Padawan of Jedi Master Jaro Tapal when Order 66 was enacted to end the Clone Wars and purge the galaxy of all Jedi. Cal survived the purge and lived in exile as a scrapper for 5 years.
When hunted by the Empire's Inquisitors, Cal landed with the Mantis crew of Greez and former Jedi Knight Cere Junda. Cere had disconnected herself from the Force but worked with Cal to retrieve Jedi holocrons and rebuild the Jedi Order.
Their adventures during the events of the preceding game Jedi: Fallen Order led them to face off against Cere's former-padawan-turned-Inquisitor Trilla Suduri and Sith Lord Darth Vader.
According to an interview with Esquire Cameron Monaghan reveals that Cal being trained was part of the status quo for the first 13 years of his life. Considering that the events of Fallen Order are five years after Order 66, that makes Cal 18 years old during the first game.
With Jedi Survivor being set five years after Fallen Order, that will make Cal's age roughly around 23 years.
