Get Crossguard Stance In Shattered Moon First

To dropkick an enemy, you first need to unlock the Crossguard Lightsaber Stance. The stance can be unlocked after beating the boss in Shattered Moon.

With the Crossguard Stance equipped, simply run at an enemy and hit the attack button to dropkick the enemy.

Performing a dropkick while you have the Mullet hairstyle will earn you the Road House trophy. You can get the Mullet in a chest in Derelict Dam on Koboh.
