You can buy and sell your items by talking with NPCs or Traders and clicking the Trade icon during dialogue. Check this guide out and learn how to trade and barter with NPCs in Baldur's Gate 3 (BG3).

You can buy items from Merchant NPCs by double clicking on the items you want to buy from their inventory on the Trade Menu. The cost of the item is indicated on the bottom right of the window that appears when hovering over an item.
One rather hidden trading function is the ability to trade with NPCs you converse with. While there are some limitations to it, you can and will be able to trade with NPCs while conversing with them if they have a button depicting a hand with some coins at the bottom left of the screen.
If the button is present, you should be able to press it to open up a barter and trade menu as soon as there is a lull in the conversation. However, do note that this is usually limited to NPCs you can have a conversation with. One-liner NPCs will not have trading available when spoken to.
Drag the items you want to barter on the center columns, as well as the items you want to acquire from the NPC. The total value of the items presented will be indicated at the top of the columns.
The overall cost of your selected items should be of equal value with the items you want to acquire from the trader. Otherwise, your offer to barter will be refused.
Do note that the more liked you are by NPCs and merchants, the better the price values are for your transactions. Earning their favor will increase your chances of getting better deals in the future.
When you barter in favor of merchants, such as offering a higher value than the intended cost, you increase their approval towards you. This helps you get better deals the next time you visit them.

Sell your items to Merchant NPCs by double clicking on the items you want to be sold on your inventory. The value of the item you're selling is indicated on the bottom right of the window that appears when you highlight it.
At the start of Act 1, the nearest Merchants will be found at the Emerald Grove. Once you gain access to the Druid's grove, seek out Arron the Halfling merchant or Dammon the Tiefling blacksmith if you want to sell your items.
It is advised not to trade or barter with Mattis as players will have their inventories stolen from them after the transaction, and the only way to get them back is to finishing the Find Your Belongings side quest.

Leveling up a character or companion in the game restocks the inventory of any merchant you had a transaction with. This can be useful when you need to sell a lot of items but find that the Merchant does not have enough gold to cover everything sold.
To refresh merchant stocks using this method, simply level up your character, and approach a merchant afterwards. Doing this will refresh their inventory, giving them more gold to give you as you sell them your wares and junk items.
Similar to leveling up, using Long Rest will also restock the inventory of merchants you've had past dealings with. Make sure to check their stocks regularly after a long rest if you find yourself short on supplies like potions, lockpicks, and trap disarm kits.
