To get Dragonite, you will need to get them via evolution. This means that you will need to get their pre-evolution first and then fulfill their evolution requirement to get this Pokemon.

An Adamant nature is one of the best choices for Dragonite because it boosts its already high Attack stat. It benefits a lot from this nature, given it has access to some of the strongest Normal, Flying, Rock, Fighting, and Ground moves, which are all considered Physical Attacks.
Alternatively, you can have Jolly as a secondary option, as Dragonite is quite slow. This lets it attack first, allowing you to potentially sweep enemies before taking damage.

* Modest lowers Dragonite's Attack stat, which is only viable in Gen 3 due to the lack of a Physical and Special Attack split.
Specific to Gen 3 only, Dragonite can use Modest due to its highly versatile moveset, letting you access powerful Dragon, Electric, Fire, and Ice moves. Do note that in the succeeding games that come after FireRed, moves become split into Physical or Special Attacks regardless of type, so having Modest outside of FRLG might be counterintuitive.
The stat difference of Atk. and Sp. Atk. for Dragonite is also quite big, so it's important that you commit only to Special Moves if you're running Modest. You'll lose out on damage otherwise by lessening Atk. and using Physical Attacks.
