There are a total of 25 Natures in Pokemon FireRed and LeafGreen. 20 of these Natures will change the growth rate of two different stats, while 5 of them will keep all stat growths neutral across the board.

If you're looking to optimize your Pokemon's Natures, then it's recommended to get Timid for Special Attackers and Jolly for Physical Attackers. This is because Speed is king, and it's important that you get to act before your opponent does.
However, if you're not looking for the best possible Nature, then it's completely fine to go for any of the Speed boosting ones, as long as it doesn't lower your Pokemon's main attacking stat.

For Pokemon that are already fast like Electrode, or slow and bulky ones like Snorlax, you can opt for offensive stat boosting natures like Adamant or Modest instead. Similar to the Speed boosting stats, you can also go for the other Attack or Sp. Attack boosting natures as well, as long as it doesn't lower Speed.

To see a Pokemon's Nature, you will simply need to select the Pokemon and check their summary under the Info Screen. You will then be able to see the Nature under "Trainer Memo".
Unlike the games that were released after Generation 3, the Pokemon's stats aren't highlighted to show which ones are increased and decreased from the Pokemon's Nature. Unless you're extremely familiar with the series and system, it's difficult to tell what stats are affected without checking other sources.

Natures are a modifier that will change how much certain stats will increase as your Pokemon levels up. As an example, a Pokemon with an Adamant Nature will gain more Attack as they level, but they will gain less Sp. Attack as the trade-off.
EXP Farming Guide: How to Level Up Fast
Unlike every other Nature, the Hardy, Docile, Bashful, Quirky, and Serious Natures are considered neutral, meaning that they don't increase or decrease any stat.
Unlike the modern Pokemon titles that have items that can change a Pokemon's Nature, the older games do not have that. This means that once a Pokemon's Nature has been assigned in FireRed and LeafGreen, it will be stuck with that nature permanently.
