You can find the Giant Sapling in the Crushing Cavern, specifically north of Lost Woods. The Giant Sapling is the only boss in this location, and defeating it within 6 turns rewards you with the Solidifying Picto, a great defensive picto for your characters to equip.

Giant Sapling has a gimmick that pushes a wall against the expedition if not defeated immediately, resulting in a loss after 6 turns. Given this, the best way to defeat Giant Sapling is to deal massive damage using any of your strongest moves.
Aside from that, Giant Sapling doesn’t have any known attack patterns beyond the three random ballista shots it throws each turn. It’s a straightforward battle and you just need to defeat it before the wall closes in.
You can also exploit Giant Sapling's weakness to fire to deal more damage. This makes Lune a great addition to the party, as she has access to fire skills you can use in this fight.

Giant Sapling will go on the defensive on certain turns and erect a shield. Use any skills that can break this, such as Maelle's Breaking Rules, to deal damage while also removing the shield.
Best Skills for Each Character

In case you're having a hard time dealing damage, you can try breaking Giant Sapling instead. When stunned, it won't push the wall, giving you an opening to deal more damage before it recovers.
Maelle, in this combat, comes in handy again, as she can use her Fleuret Fury skill to break the Giant Sapling.
