Adding to this, after you get Esquie and can get to him, Merchant Jumeliba on the continent just north of the previous merchant on the other little beach also has the Bun Braid haircut for Gustave. I'm in NG+, so don't know if these new ones are there always or only in NG+ after previously completing the new DLC content.

Amending my comment....There is a Chic outfit, Chic haircut, and Esquie haircut for Gustave on Merchant Carrabi on the continent. Same vendor that has the Lumiere outfits for Gustave and Maelle.
