Minotaur III is weak to Fire but Physical attacks are useless against it. Bring Koromaru, or one of your own Fire-focused Personas, instead of Junpei since he's a weaker magic attacker.

Minotaur IV is weak to Ice but it also nullifies Fire and Dark. You want to bring Mitsuru for this since she's the best Ice attacker in the party, plus AoE Ice Skills are effective against Minotaur III.
Make sure that you bring a Persona who can cast Dekunda. Minotaur III can cast Heat Riser on itself to boost all its stats, so make sure to remove their buffs as soon as possible.
Minotaur IV has access to Bewilder and Provoke, which can cause one of your party members to become Distressed or Enraged respectively. Bring Yukari with you so that she can cure allies with a negative status effect.
You'll want to start the fight by using AoE Ice Skills to maximize your damage output. Once the Minotaur IV gets knocked down, you can Shift to someone with Fire Skills to knock the other one down and launch an All-Out Attack!
Minotaur III can be found inside a Monad Door in Antenora. It's recommended to always take the door on the right to guarantee that this boss will spawn.
