The Oni only has one weapon in this fight, the Odachi. Switch to your own Katana so that your weapon is aligned against The Oni, dealing more stagger damage to him after you attack or parry.
Oni Flame can enhance your katana strikes to deal more damage and stagger The Oni a bit if you are able to set him on fire after hitting him a few times. This will allow you to get more time to put some distance away from him, refresh your Oni Flame, or continue hitting him.
The Oni's gold glint attacks are far too quick and dangerous to take advantage of and is often used after an another attack from him. It is better to dodge it altogether instead of disarming him to avoid risking yourself getting hit.
Most of The Oni's blue glint attacks are slow. Take this opportunity to perfect parry him when the blue glint starts to fade out as it will interrupt all of his incoming attacks and also deal stagger damage.
One of The Oni's red glint attack leaves a trail of fire on the field that can put you on fire when hit. Do not confront him head on when this happens and wait for the fire to disappear before attacking.
If you get caught on fire, you can use the roll technique to put out the fire or equip the Taro Armor to help lessen the effect of fire damage on you.
Taro's Armor Effects and How to Get

As part of The Oni questline, you need to meet Jubei on a coast southwest of Stone Jaw Coast to initiate an invasion to Ishikari Castle.
