Switching to the correct weapon to counter the enemy will deal more stagger damage. During a fight, keep an eye on the enemy to see if they switch weapons. Usually they will change it after fulfilling a condition or after disarming them.
All Weapon Type Guide

In a duel, the player has the power to use any throwables to gain an advantage in the fight. Stock up on supplies before heading on to a duel.

Unlike regular encounters, boss fights tend to be a duel, and no one will interfere with the fight between you and the boss. Play defensively and let enemies attack so that you can counter a devastating blow.
