To drink Sake, which is a consumable item in Ghost of Yotei, you must hold the down button on the D-Pad. See here for how to drink or use sake, as well as the best ways to get them.

Hold the Down Button to Restore Spirit

Sake is a consumable item that can be used anywhere to restore spirit by holding the Down button on the D-Pad. This is especially useful in duels or boss fights where you need more health restoration or to use techniques that consume it.
Do Not Drink More Than Two Sake
You can only hold up to two sake at a time and each usage of it will turn the screen blurrier, making it hard to see especially in the middle of a battle. Drinking a third bottle of sake in a row makes Atsu vomit so keep this in mind in the heat of a battle.
Sake Can be Used to Craft Oni Fire Instead of Being Consumed
You can use the sake to craft Oni Flame while camping. Oni Flame is a consumable that empowers your weapon by setting it ablaze, and your hits set enemies on fire.
Best Ways to Get Sake
In Camps and Buildings
Sake can be found in areas where there will most likely be people residing such as campsites, towns and compounds.
Purchased From Merchants
Sake can also be obtained if you purchase it from Merchants found across any region. Do note that this costs Metal to buy from Merchants so only purchase them if you need it immediately.
