You can increase Spirit by completing Bamboo Strikes in Ghost of Yotei. Found out how to perfect bamboo strikes, where to find them, and how to restore spirit here!
The only way to increase your maximum spirit is to complete the Bamboo Strike. These are quicktime events that require you to press a succession of buttons as fast as you can to cut a row of bamboo. Successfully cutting all bamboo stalks will give you a permanent increase in Spirit.

If you are having difficulty completing the Bamboo Strike, go to your Accessibility menu and turn on the Rapid Button Presses - Simplified. This will remove the time factor to events that require rapid or repetitive button bresses. Which means that to complete the strike, all you have to do is to memorize the sequence.
You can earn spirit by killing enemies, Parrying, and using advanced techniques like Assassination.
If you run out of Spirit during combat, you can drink sake to replenish a moderate amount of Spirit. Just be careful since drinking too much can impair your vision.

If you are running out of Spirit, take a break and set up camp. Camping will fully restore your spirit.

Cooking a meal will give you a bonus Spirit. You can also gain a random perk that will last for a day with your meal.

You can also equip the Charm of Assassin's Spirit to increase the Spirit you receive for every assassination made.

Spirit is needed to perform special combat moves that you unlock from the Growth menu and to perform healing in the middle of combat. Your Spirit Meter is represented by the orbs on top of your health bar on the lower left of your HUD.
