Can Be Dropped by Enemies

The Talismans which are used as materials to craft Vessels can be obtained as drops or stolen from enemies. Having the Merchant or Thief Archetype Lineages can help to significantly increase your odds.

Head to Virga Islands and head into the Dragon Statue Plaza and you will see a stall littered with Monster Parts. This Boastful Shopkeeper is Krozelli the Hunter and he will sell you each Talisman for 100,000 Reeves each.

Obtain New Skills By Obtaining Vessels

New Skills Can Only Be Learned When You Own a Vessel

The Summoner Archetype Lineage are special because they learn new Skills when you create new Vessels.

Certain Skills Are Affected by Vessels

While it looks like the Summoner doesn't have much skills, some of it is actually locked behind certain Vessels. For example, Summon Gargoyle is a standard skill for the Summoner but requires the Stone Wing Vessel in your inventory before it can be used.

Allies Can Share a Single Vessel

You do not need multiple vessels for each party member. Just having one in your inventory will let any party member summon the demon or monster associated with its Vessel.
