The Mage Knight's Mask and Knight's Mask Need to be Crafted First

Two masks are needed if you want to craft Paladin's Mask, these are the Mage Knight's Mask and the Knight's Mask. These require the materials shown above in order to craft, which can be obtained via monster drops or bought from the Weary Merchant at Port Brilehaven.
Combine the Mage Knight's Mask and Knight's Mask to Craft Paladin's Mask

After obtaining the Mage Knight's Mask and Knight's Mask, you can finally combine them to get the Paladin's Mask.
Crafted at the Akademeia via Special Experiments
Requires its Corresponding Materials and the Paladin Archetype Unlocked
You will gain the ability to craft Masks via Special Experiment at the Akademeia once Junah joins your party on the 8th Month.
Along with the materials, if you want to craft the Paladin's Mask, you first need to have unlocked the Paladin Archetype.
