Dark Priestess Signa will lock Sazantos' weaknesses, preventing you from shield breaking him which is why you should prioritize taking her out first. She can also inflict several debilitating status effects throughout the fight, such as Blinding Wave and Paralyzing Wave which inflicts Blindness and Paralysis respectively for 3 turns.
Dark Priestess Signa can also inflict No Switch for two turns using Demolishing Black Flame and Flood of Curse, on top of healing Sazantos to near full health.
Prioritize shield breaking her and use boosts to quickly dispatch her so to unlock Sazantos' weaknesses and start damaging his shield.
Bring Characters that Can Provide Healing and Defensive Buffs
Sazantos will receive a large boost to his offenses and will start attacking twice during his turn once Dark Priestess Signa is defeated. You can easily mitigate his increased damage however by having characters that can set up defensive buffs and passive healing throughout the fight.
Pius can provide burst healing with Heal Wounds and also damage mitigation with Sacred Shield to a single character. Saoirse is another good choice since her Dance of Respite provides passive healing to an entire row for two turns, and she can also raise a character's speed using Panther Dance.

Sazantos and Dark Priestess Signa are fought in the Ridge of the Imprisoned God during Precipice of Loss, which is Chapter 6 in the Bestower of All questline.
