During the fight, Saint Sazantos will ocassionally get enveloped bt the Accurst Flame at the end of his turn which will lock one of his weaknesses. This lock however only applies to his Bows, Staves, Lightning, and Ice weaknesses.
You'll need to break his shield to unlock any locked weaknesses. Since the weakness lock does not apply to his Wind weakness, characters that can inflict this damage type are very useful for this fight.
The Protagonist with the Merchant or Scholar job can deal consistent Wind damage with their skills. Tatloch is another good choice with her Great Winds and Wind Blow skills, while also having skills that can boost the offenses and speed of the party.

Creator Orsazantos will always change his weakness once weakness broken. The set of weaknesses he changes to depends on how much HP he has. At high HP, he'll switch between the first two weakness sets and he'll switch to the last two weakness sets at low HP.
A Protagonist with the Scholar job or Alexia are great options for this fight since Creator Orsazantos has many elemental weaknesses that these characters can exploit with their skills.
Keep in mind that Creator Orsazantos can inflict Silence with one of his attacks, so stock up on Herb of Clamor before the fight. You can also bring Alfyn during the fight so he can use Rehabilitate to grant your main spell casters immunity to status for 2 turns.
Break His Shield to Prevent Selfless Spirit
Creator Orsazantos will often enter boost mode throughout the fight. If his shield is not broken before the end of the turn, he'll use Selfless Spirit to reduce the entire party's SP to 0.
This move can be devastating to your party since you'll need to rely on powerful skills during the fight to break his shield. Once you see Orsazantos boost, deal as much damage as possible with your characters to quickly break his shield to stop him from using Selfless Spirit.
