Have Characters that Can Inflict His Weakness in the Back Row
Gonzalez the Ironarm can use a move called Ram which will deal damage and force the damaged character to the back row, which can be troublesome if you have mostly support characters in your back row.
Make sure to have some characters that can deal sword, dagger, tome, wind, and ice damage on the back row to ensure that you can still deal damage to the boss' shield even if he forces your characters to switch. Viator, for example, is good to place in the back row since his Charging Strike skill deals more damage if he attacks from the back row.
Break His Shield Before he Does a War Cry
At low health, Gonzalez will let out a war cry which gives him a Phys.Atk.Up buff for two turns, while also increasing his base shields to 19.
You'll need to quickly break his shield when he does this since he'll deal a powerful Rage of Iron attack which will also send hit characters to the back row. Make sure to save enough BP for your main attackers, or have characters that can use Donate BP so you can quickly break his shield.

Gonzalez the Ironarm is fought during the El the Swordsman quest in the Valley of Death. He's fought as you make your way south to reach the main encampment.
