Parry Cheng Pu's Strikes
Cheng Pu has several follow-up strikes after most of his attacks, so one of the easier ways to deal with him is by using perfect blocks to parry him.
For most attacks, watch out for a white flash then anticipate the swing of his Crescent Blade. Practice attack timings with your blocks and the fight should be fairly easy from there.
Eyes of the Sacred Bird Can Help with Parries
If you're trying to check the perfect block timings for Cheng Pu, you can utilize the view and slow motion mechanic of the Eyes of the Sacred Bird. You can use this right when Cheng Pu attacks, and then release when you have readied your block button.
How to Use Eyes of the Sacred Bird
Second Phase Increases His Stance
Once you have fully broken Cheng Pu's stance, he will enter his second phase. During this phase, his maximum stance count will be increased from 4 to 5, meaning it will take more hits for him to be stance-broken.
Other than that, there is not much difference in Cheng Pu's moveset. Continue fighting him patiently and avoiding attacks until he runs out HP.
Block His Spinning Crescent Blade
One of Cheng Pu's more notable attacks is when he swings his Crescent Blade four times. You can deal with this attack through blocks, then attack him after he does his attack's final swing.
