Cutscenes in Donkey Kong Bananza cannot be replayed after you watch or skip them during the main story.

Bosses such as Void Kong, Grumpy Kong, and Poppy Kong cannot be fought again once you finish their boss fights in the main story. They also do not appear in the post-game Boss Rush mode.

Once a costume has been upgrade, there is no option for you to lower its level.
All Outfits and How to Change Costumes

Obtained Banandium Gems do not appear on the location where you found them. An exception to this are Banandium Gems found in Challenge Ruins and in the post-game Rehearsal Halls.
In addition, the special animation that plays upon obtaining a Banandium Gem will only display the first time.
All Banana Locations (Banandium Gems)

You can reset your skill points any time once you unlock the Bananza transformations.
Speak with any of the Elders and select the Reset Skills option.

You can unlock the Boss Rush mode after completing the main story. All bosses, except for Void Kong, Grumpy Kong, and Poppy Kong can be fought as many times as you want in this mode.
Note that you must pay 5000 Gold for the game mode to appear in Ingot Isle.
The final boss can be fought again at the Planet Core layer. Interact with the Banandium Root and choose the dialogue option to fight the final boss.

You can reset destroyed terrain any time by opening the Map Screen and pressing the Plus (+) Button. Choose "Reset it all!" to reset the terrain.

You can retry the Challenge Ruins found in various layers as many times as you like. If you miss a hidden Banandium Gem, you can always go back to the ruins and retry the challenge.

The "Rehearsal Hall" ending may be missable, I completed everything before going to the planet core and when I went to the surface I just got the "Secret Ending" and never saw the other one.

Had to beat the game on a previous file to see that ending so I think it is missable indeed. Also another one-time thing on the game are the Pauline dialogues at getaways, they only show up the first time you rest at one even if you skip them.
